A really deliciously juicy, junk food-like specialty from Genoa - focaccia al formaggio. At first glance, it looks quite simple: between two very thin layers of dough you will find lots of hot, melted stracchino cheese. When I ordered it, I only got one "Un genova classico" for free. Legend has it that this delicacy originally comes from Genoa's neighboring town of Recco - but it's hard to imagine how it could taste any better than at "Focaccia e Dintori". Caution: absolute danger of addiction!

Something wonderful was invented in Genoa almost exactly 150 years ago: pánera - the "black cream". This is an incredibly melt-in-the-mouth semifreddo made from fresh cream with coffee powder. The special preparation with the addition of fresh egg yolk makes it a very special dessert. You won't always find it in the local patisseries and ice cream parlors, but here, yes - here you can get the leader of the pack in your waffle.
